Rice tube pudding: a memory snack to guard Taiwan's rice flavor

 Taiwan's rice culture has been passed down for thousands of years, but with the changing times, the brilliance of rice food seems to be gradually replaced by noodles. Even so, we can still taste the fragrance of the land, Grandma's craftsmanship handed down from generation to generation, and the purest common people's snack soul from a bowl of plain Rice tube pudding. Rice cakes made from glutinous rice are not only the warmth of a satisfying meal, but also the most direct support for hardworking farmers. Now, let's follow the 'Gourmet Column' and rediscover the fragrance hidden deep in our memories together.[Materials]


 Step 1: Steam glutinous rice to make the rice grains distinct, soft with a hint of stickiness1. Wash the glutinous rice, add 420g of water, and soak for more than 4 hours.
2. Put the rice in an electric pot and steam for about 20 minutes. After confirming that the rice is fully cooked, steam it and set it aside.
Step 2: Explosive aroma and concentrated meat filling interweave to create an irreplaceable fragrance
1. Soak the mushrooms until soft and cut them into shreds; Soak the shrimp in water and drain.
2. Marinate the shredded pork belly with all the seasonings.
3. Pour salad oil into the pot, add mushrooms and shrimp in sequence, stir fry until rich aroma is achieved.
4. Add shredded pork belly and seasonings, and simmer over medium heat for about 10 minutes until the sauce is half finished.
Step 3: The rice aroma, filling, and sauce blend perfectly together to contain the rich ancient flavor
1. After turning off the heat, pour the cooked meat filling into the steamed glutinous rice, quickly and gently stir evenly, allowing the rice grains to absorb the meat juice.
2. Press the mixed rice into the model of Rice tube pudding, put it into the electric pot and cook for 15 minutes to make it set.
3. Pour the rice cake onto a plate and drizzle with Shanghai mountain sauce to enhance the salty, sweet, and slightly sour flavor of the sauce, adding layers to the aroma of the rice cake. Finally, sprinkle a small amount of cilantro for decoration, satisfying the color, aroma, and taste at once.
Appendix: Haishan Sauce
Mix miso, tomato sauce, sugar, soy sauce paste, and water together, and bring to a boil over low heat.
